Ingredients:

  • 1 cup (120 g) cornmeal (preferably stone-ground)
  • 4 cups (960 ml) water
  • 1 teaspoon (5 g) salt
  • 2 tablespoons (30 g) butter (optional)
  • Maple syrup, honey, or agave nectar (for sweetness, optional)
  • Brown sugar, cinnamon, or fresh fruit (for topping, optional)

Instructions:

  1. In a medium saucepan, bring 4 cups of water to a boil over medium-high heat.
  2. Gradually whisk in the cornmeal to avoid lumps.
  3. Add 1 teaspoon of salt and reduce heat to low.
  4. Cook the mixture, stirring frequently for about 10-15 minutes, or until thickened.
  5. Remove from heat and stir in 2 tablespoons of butter, if using.
  6. Serve warm with desired toppings.
