Ingredients:

  • 8 ounces (227g) full-fat cottage cheese
  • 4 ounces (113g) dark chocolate (at least 70% cocoa), chopped
  • 2 tablespoons unsweetened cocoa powder
  • 2 tablespoons maple syrup (or honey)
  • 1 teaspoon vanilla extract
  • Pinch of sea salt
  • Optional: Fresh berries for garnish, chocolate shavings for garnish

Instructions:

  1. Gently melt the chopped dark chocolate either in a double boiler or in the microwave in 30-second intervals, stirring in between, until smooth.
  2. Place the cottage cheese in a high-speed blender or food processor. Blend until completely smooth and creamy, scraping down the sides as needed.
  3. Add the melted chocolate, cocoa powder, maple syrup (or honey), vanilla extract, and salt to the blender with the cottage cheese.
  4. Blend until the mixture is completely smooth, rich, and evenly colored. Scrape down the sides to ensure everything is incorporated.
  5. Pour the mousse into individual serving glasses or bowls. Cover with plastic wrap (pressing it directly onto the surface) and refrigerate for at least 1 hour to allow the mousse to firm up.
  6. Just before serving, garnish with fresh berries or chocolate shavings (if desired).
