Ingredients:
- 8 ounces (227g) full-fat cottage cheese
- 4 ounces (113g) dark chocolate (at least 70% cocoa), chopped
- 2 tablespoons unsweetened cocoa powder
- 2 tablespoons maple syrup (or honey)
- 1 teaspoon vanilla extract
- Pinch of sea salt
- Optional: Fresh berries for garnish, chocolate shavings for garnish
Instructions:
- Gently melt the chopped dark chocolate either in a double boiler or in the microwave in 30-second intervals, stirring in between, until smooth.
- Place the cottage cheese in a high-speed blender or food processor. Blend until completely smooth and creamy, scraping down the sides as needed.
- Add the melted chocolate, cocoa powder, maple syrup (or honey), vanilla extract, and salt to the blender with the cottage cheese.
- Blend until the mixture is completely smooth, rich, and evenly colored. Scrape down the sides to ensure everything is incorporated.
- Pour the mousse into individual serving glasses or bowls. Cover with plastic wrap (pressing it directly onto the surface) and refrigerate for at least 1 hour to allow the mousse to firm up.
- Just before serving, garnish with fresh berries or chocolate shavings (if desired).
