Ingredients:

  • 6-8 Ripe bananas
  • 1/2 cup (100g) Granulated sugar
  • 1/4 cup (50g) Packed brown sugar
  • 1 tsp Ground cinnamon
  • 1 tbsp Fresh lemon juice
  • 1 tsp Pure vanilla extract
  • 1 tbsp (14g) Salted butter
  • Pinch Ground nutmeg
  • 2 cups (250g) All-purpose flour
  • 2 tsp Baking powder
  • 1/2 tsp (3g) Salt
  • 1/2 cup (113g) Cold unsalted butter, cut into small cubes
  • 3/4 cup (180ml) Whole milk
  • 1 tbsp Granulated sugar (for sprinkling)

Instructions:

  1. Slice bananas into 1/2-inch rounds. Set aside.
  2. Melt butter in a saucepan. Stir in sugars, cinnamon, nutmeg, lemon juice, and vanilla extract (and rum extract if using). Add sliced bananas and cook gently until softened.
  3. Whisk together flour, baking powder, and salt in a large bowl. Cut in cold butter until the mixture resembles coarse crumbs. Stir in milk until just combined.
  4. Pour the banana mixture into the baking dish. Drop spoonfuls of biscuit topping over the banana filling.
  5. Sprinkle sugar over the topping. Bake in a preheated oven at 375°F (190°C) for 30-35 minutes, or until the topping is golden brown and the filling is bubbly.
  6. Let the cobbler cool slightly before serving. Drizzle with caramel sauce, if desired.
