Ingredients:
- 6-8 Ripe bananas
- 1/2 cup (100g) Granulated sugar
- 1/4 cup (50g) Packed brown sugar
- 1 tsp Ground cinnamon
- 1 tbsp Fresh lemon juice
- 1 tsp Pure vanilla extract
- 1 tbsp (14g) Salted butter
- Pinch Ground nutmeg
- 2 cups (250g) All-purpose flour
- 2 tsp Baking powder
- 1/2 tsp (3g) Salt
- 1/2 cup (113g) Cold unsalted butter, cut into small cubes
- 3/4 cup (180ml) Whole milk
- 1 tbsp Granulated sugar (for sprinkling)
Instructions:
- Slice bananas into 1/2-inch rounds. Set aside.
- Melt butter in a saucepan. Stir in sugars, cinnamon, nutmeg, lemon juice, and vanilla extract (and rum extract if using). Add sliced bananas and cook gently until softened.
- Whisk together flour, baking powder, and salt in a large bowl. Cut in cold butter until the mixture resembles coarse crumbs. Stir in milk until just combined.
- Pour the banana mixture into the baking dish. Drop spoonfuls of biscuit topping over the banana filling.
- Sprinkle sugar over the topping. Bake in a preheated oven at 375°F (190°C) for 30-35 minutes, or until the topping is golden brown and the filling is bubbly.
- Let the cobbler cool slightly before serving. Drizzle with caramel sauce, if desired.
