Ingredients:
- 2 tablespoons (30 ml) unsweetened cocoa powder
- 2 tablespoons (25g) granulated sugar
- 1 tablespoon (15 ml) all-purpose flour
- ⅛ teaspoon baking powder
- Pinch of salt
- 2 tablespoons (30 ml) milk (dairy or non-dairy)
- 2 tablespoons (30 ml) melted unsalted butter OR coconut oil
- 2 tablespoons (30g) full-fat cottage cheese
- ¼ teaspoon vanilla extract
- Optional: 1 tablespoon (15g) chocolate chips, chopped nuts, or sprinkles
Instructions:
- In the mug, combine cocoa powder, sugar, flour, baking powder, and salt. Whisk until evenly distributed.
- Add milk, melted butter (or coconut oil), cottage cheese, and vanilla extract to the mug.
- Stir vigorously with a fork or small whisk until smooth and no lumps remain. It's okay if it looks a little curdled from the cottage cheese – it will bake out.
- If using, stir in chocolate chips, nuts, or sprinkles.
- Microwave on high for 1-2 minutes. Start with 1 minute and check for doneness. The brownie is done when it's puffed up and slightly firm to the touch. Be careful not to overcook, or it will become dry.
- Let the brownie cool for a minute or two before enjoying. It will be very hot!
