Ingredients:

  • 2 tablespoons (30 ml) unsweetened cocoa powder
  • 2 tablespoons (25g) granulated sugar
  • 1 tablespoon (15 ml) all-purpose flour
  • ⅛ teaspoon baking powder
  • Pinch of salt
  • 2 tablespoons (30 ml) milk (dairy or non-dairy)
  • 2 tablespoons (30 ml) melted unsalted butter OR coconut oil
  • 2 tablespoons (30g) full-fat cottage cheese
  • ¼ teaspoon vanilla extract
  • Optional: 1 tablespoon (15g) chocolate chips, chopped nuts, or sprinkles

Instructions:

  1. In the mug, combine cocoa powder, sugar, flour, baking powder, and salt. Whisk until evenly distributed.
  2. Add milk, melted butter (or coconut oil), cottage cheese, and vanilla extract to the mug.
  3. Stir vigorously with a fork or small whisk until smooth and no lumps remain. It's okay if it looks a little curdled from the cottage cheese – it will bake out.
  4. If using, stir in chocolate chips, nuts, or sprinkles.
  5. Microwave on high for 1-2 minutes. Start with 1 minute and check for doneness. The brownie is done when it's puffed up and slightly firm to the touch. Be careful not to overcook, or it will become dry.
  6. Let the brownie cool for a minute or two before enjoying. It will be very hot!
