Ingredients:
- 1.5 lbs boneless skinless chicken breast, cut into 1-inch cubes
- 1 lb potato gnocchi
- 2 tbsp olive oil
- 1 medium yellow onion, finely diced
- 3 cloves garlic, minced
- 2 cups marinara sauce
- 1/2 cup grated Parmesan cheese
- 1 cup shredded mozzarella cheese
- 1 tsp dried oregano
- 1/2 tsp red pepper flakes
Instructions:
- Heat olive oil in a large skillet over medium-high heat. Season chicken cubes with salt and pepper, then add to the pan and cook until golden-brown on all sides, approximately 5–7 minutes. Remove chicken and set aside.
- In the same skillet, add diced onion and cook until translucent. Stir in minced garlic and cook for 30 seconds until fragrant.
- Add uncooked gnocchi directly to the skillet with the onions and garlic. Sauté for 4–6 minutes, stirring occasionally, until the gnocchi develop a light golden-brown exterior.
- Return the seared chicken to the skillet. Stir in marinara sauce, dried oregano, and red pepper flakes. Bring to a gentle simmer for 3–5 minutes until the sauce thickens slightly.
- Sprinkle Parmesan and mozzarella cheese evenly over the top. Place skillet under a broiler for 2–3 minutes until the cheese is bubbling and browned.
- Finish the dish by garnishing with torn fresh basil and optional melted butter.
