Ingredients:

  • 1.5 lbs boneless skinless chicken breast, cut into 1-inch cubes
  • 1 lb potato gnocchi
  • 2 tbsp olive oil
  • 1 medium yellow onion, finely diced
  • 3 cloves garlic, minced
  • 2 cups marinara sauce
  • 1/2 cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • 1 tsp dried oregano
  • 1/2 tsp red pepper flakes

Instructions:

  1. Heat olive oil in a large skillet over medium-high heat. Season chicken cubes with salt and pepper, then add to the pan and cook until golden-brown on all sides, approximately 5–7 minutes. Remove chicken and set aside.
  2. In the same skillet, add diced onion and cook until translucent. Stir in minced garlic and cook for 30 seconds until fragrant.
  3. Add uncooked gnocchi directly to the skillet with the onions and garlic. Sauté for 4–6 minutes, stirring occasionally, until the gnocchi develop a light golden-brown exterior.
  4. Return the seared chicken to the skillet. Stir in marinara sauce, dried oregano, and red pepper flakes. Bring to a gentle simmer for 3–5 minutes until the sauce thickens slightly.
  5. Sprinkle Parmesan and mozzarella cheese evenly over the top. Place skillet under a broiler for 2–3 minutes until the cheese is bubbling and browned.
  6. Finish the dish by garnishing with torn fresh basil and optional melted butter.
