Ingredients:
- 1/2 pound (225g) Ground Beef (80/20 blend recommended)
- 1/4 teaspoon Salt (plus more to taste)
- 1/4 teaspoon Black Pepper (plus more to taste)
- 1 tablespoon Vegetable Oil (or other high-heat cooking oil)
- 1/4 cup finely diced Onion (about 1/4 small onion)
- Optional: 1 clove Garlic, minced (for extra flavour)
- 4 Small Flour Tortillas (6-inch diameter is ideal)
- 1 cup (115g) Shredded Cheddar Cheese (or your favourite melting cheese blend)
- Optional: Your favourite burger toppings (e.g., shredded lettuce, sliced tomato, pickles, burger sauce)
Instructions:
- In a small bowl, gently combine ground beef, salt, and pepper. Form into two equal-sized balls, handling the meat as little as possible.
- Heat the oil in the skillet over medium-high heat until shimmering. Place one ball of beef in the skillet. Immediately smash it down with a spatula until very thin (about ¼-inch thick). Repeat with the other beef ball, leaving space between them. If using, add onions and garlic alongside the burgers to cook in the beef fat.
- Cook the burgers for 2-3 minutes per side, until deeply browned and caramelized. Use the spatula to scrape the burger from the pan, ensuring it is fully cooked through (internal temperature of 160°F/71°C). Remove from skillet and set aside.
- Place two tortillas in the skillet. Sprinkle half of the cheese over each tortilla. Top with one smashburger each, then add any additional toppings. Sprinkle with the remaining cheese.
- Top each with the remaining tortillas. Cook for 2-3 minutes per side, or until the tortillas are golden brown and the cheese is melted and gooey.
- Remove from the skillet, slice in half or wedges, and serve immediately.
