Ingredients:

  • 1/2 pound (225g) Ground Beef (80/20 blend recommended)
  • 1/4 teaspoon Salt (plus more to taste)
  • 1/4 teaspoon Black Pepper (plus more to taste)
  • 1 tablespoon Vegetable Oil (or other high-heat cooking oil)
  • 1/4 cup finely diced Onion (about 1/4 small onion)
  • Optional: 1 clove Garlic, minced (for extra flavour)
  • 4 Small Flour Tortillas (6-inch diameter is ideal)
  • 1 cup (115g) Shredded Cheddar Cheese (or your favourite melting cheese blend)
  • Optional: Your favourite burger toppings (e.g., shredded lettuce, sliced tomato, pickles, burger sauce)

Instructions:

  1. In a small bowl, gently combine ground beef, salt, and pepper. Form into two equal-sized balls, handling the meat as little as possible.
  2. Heat the oil in the skillet over medium-high heat until shimmering. Place one ball of beef in the skillet. Immediately smash it down with a spatula until very thin (about ¼-inch thick). Repeat with the other beef ball, leaving space between them. If using, add onions and garlic alongside the burgers to cook in the beef fat.
  3. Cook the burgers for 2-3 minutes per side, until deeply browned and caramelized. Use the spatula to scrape the burger from the pan, ensuring it is fully cooked through (internal temperature of 160°F/71°C). Remove from skillet and set aside.
  4. Place two tortillas in the skillet. Sprinkle half of the cheese over each tortilla. Top with one smashburger each, then add any additional toppings. Sprinkle with the remaining cheese.
  5. Top each with the remaining tortillas. Cook for 2-3 minutes per side, or until the tortillas are golden brown and the cheese is melted and gooey.
  6. Remove from the skillet, slice in half or wedges, and serve immediately.
