Ingredients:
- 4 cups water
- 1 tablespoon vegetable oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 medium carrot, sliced
- 1 small bell pepper, diced
- 1 cup frozen peas
- 2 packs Maggi noodles
- 2 packets Maggi seasoning
- Fresh coriander leaves, chopped for garnish
- Lime wedges for garnish
Instructions:
- Heat vegetable oil in a large pot over medium heat.
- Add diced onion and sauté until translucent.
- Stir in minced garlic and cook for an additional 1 minute.
- Add carrot slices and diced bell pepper, cooking until slightly softened (about 3-4 minutes).
- Pour in the water and bring to a boil.
- Stir in Maggi seasoning and frozen peas.
- Once boiling, add the Maggi noodles and cook according to package instructions (usually 2-3 minutes).
- Remove from heat and let it sit for 2 minutes.
- Serve hot, garnished with fresh coriander and lime wedges.
