Ingredients:
- 1 cup long-grain white rice
- 2 cups chicken broth
- 1 tablespoon vegetable oil
- ½ pound ground pork
- ½ pound ground beef
- ½ cup onion, finely chopped
- ½ cup green bell pepper, finely chopped
- ½ cup celery, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon cayenne pepper
- 1 teaspoon smoked paprika
- 1 teaspoon dried thyme
- ½ teaspoon black pepper
- Salt to taste
- 2 green onions, sliced for garnish
Instructions:
- Rinse the rice under cold water until the water runs clear.
- In a medium saucepan, bring chicken broth to a boil. Add rice, reduce to a simmer, cover, and cook until tender (about 18-20 minutes). Set aside.
- In a large skillet, heat vegetable oil over medium heat. Add onion, bell pepper, and celery. Sauté until softened (about 5 minutes). Stir in garlic and cook for an additional minute.
- Add ground pork and beef to the skillet. Cook, breaking apart with a spoon, until browned (about 8-10 minutes). Drain excess fat if necessary.
- Stir in cayenne, smoked paprika, thyme, black pepper, and salt. Cook for another 2-3 minutes to combine flavors.
- Add the cooked rice to the skillet. Mix gently until well combined. Taste and adjust seasoning if required.
- Serve hot, garnished with sliced green onions if desired.
