Ingredients:
- 1 cup (120g) cornmeal
- 4 cups (960ml) milk (whole or buttermilk)
- 1/4 cup (60g) unsalted butter, melted
- 2 large eggs, beaten
- 2 tablespoons (30g) granulated sugar
- 1 tablespoon (15g) baking powder
- 1 teaspoon (5g) salt
- 1 cup (150g) shredded cheese (optional)
- 1/4 cup (60ml) honey or maple syrup (for drizzling, optional)
Instructions:
- Preheat the oven to 400°F (200°C).
- In a mixing bowl, whisk together the cornmeal, salt, and sugar.
- Heat the milk in a saucepan over medium heat until warm (not boiling).
- Gradually pour the warm milk into the cornmeal mixture, whisking to combine and allow the mixture to sit for a few minutes.
- Stir in the melted butter and beaten eggs until smooth.
- Gently fold in the baking powder.
- If desired, fold in shredded cheese at this stage for added flavor.
- Pour the batter into the greased baking dish or skillet.
- Bake for 30-35 minutes until golden and set in the middle, with edges pulling away from the sides.
- Allow to cool slightly before serving.
