Ingredients:

  • 1 cup (120g) cornmeal
  • 4 cups (960ml) milk (whole or buttermilk)
  • 1/4 cup (60g) unsalted butter, melted
  • 2 large eggs, beaten
  • 2 tablespoons (30g) granulated sugar
  • 1 tablespoon (15g) baking powder
  • 1 teaspoon (5g) salt
  • 1 cup (150g) shredded cheese (optional)
  • 1/4 cup (60ml) honey or maple syrup (for drizzling, optional)

Instructions:

  1. Preheat the oven to 400°F (200°C).
  2. In a mixing bowl, whisk together the cornmeal, salt, and sugar.
  3. Heat the milk in a saucepan over medium heat until warm (not boiling).
  4. Gradually pour the warm milk into the cornmeal mixture, whisking to combine and allow the mixture to sit for a few minutes.
  5. Stir in the melted butter and beaten eggs until smooth.
  6. Gently fold in the baking powder.
  7. If desired, fold in shredded cheese at this stage for added flavor.
  8. Pour the batter into the greased baking dish or skillet.
  9. Bake for 30-35 minutes until golden and set in the middle, with edges pulling away from the sides.
  10. Allow to cool slightly before serving.
