Ingredients:

  • 1/2 cup (100g) fresh or frozen raspberries
  • 1/4 cup (50g) granulated sugar
  • 1/4 cup (60ml) water
  • 10-12 fresh mint leaves
  • 1 tablespoon (15ml) fresh lime juice
  • 4 ounces (120ml) raspberry syrup
  • Ice cubes
  • Sparkling water or club soda
  • Fresh raspberries and mint sprigs, for garnish (optional)

Instructions:

  1. Combine raspberries, sugar, and water in a small saucepan. Bring to a simmer over medium heat, stirring until sugar dissolves. Simmer for 5 minutes, then remove from heat and let cool slightly. Strain through a fine-mesh sieve to remove seeds (optional).
  2. In each glass, gently muddle the mint leaves with the lime juice.
  3. Add 2 ounces (60ml) of raspberry syrup to each glass. Fill the glasses with ice cubes.
  4. Top each glass with sparkling water or club soda.
  5. Garnish with fresh raspberries and mint sprigs (if desired). Stir gently to combine.
