Ingredients:
- 1/2 cup (100g) fresh or frozen raspberries
- 1/4 cup (50g) granulated sugar
- 1/4 cup (60ml) water
- 10-12 fresh mint leaves
- 1 tablespoon (15ml) fresh lime juice
- 4 ounces (120ml) raspberry syrup
- Ice cubes
- Sparkling water or club soda
- Fresh raspberries and mint sprigs, for garnish (optional)
Instructions:
- Combine raspberries, sugar, and water in a small saucepan. Bring to a simmer over medium heat, stirring until sugar dissolves. Simmer for 5 minutes, then remove from heat and let cool slightly. Strain through a fine-mesh sieve to remove seeds (optional).
- In each glass, gently muddle the mint leaves with the lime juice.
- Add 2 ounces (60ml) of raspberry syrup to each glass. Fill the glasses with ice cubes.
- Top each glass with sparkling water or club soda.
- Garnish with fresh raspberries and mint sprigs (if desired). Stir gently to combine.
