Ingredients:

  • 1 tablespoon vegetable oil (15ml)
  • 2 cloves garlic, minced (approx. 6g)
  • 1 teaspoon fresh ginger, minced (approx. 3g)
  • 1 pound bok choy, washed and roughly chopped (approx. 450g)
  • 1 tablespoon soy sauce (15ml)
  • 1 teaspoon sesame oil (5ml)
  • Optional: Red pepper flakes, to taste

Instructions:

  1. Chop the bok choy, mince the garlic and ginger. Have everything ready to go – mise en place, as the French would say!
  2. Heat vegetable oil in a wok or large skillet over medium-high heat. Add minced garlic and ginger; sauté for about 30 seconds, until fragrant (don't burn it!).
  3. Add the chopped bok choy to the wok. Stir-fry for about 3-5 minutes, until the bok choy is bright green and the stems are tender-crisp (don’t overcook!).
  4. Add soy sauce and sesame oil. Stir-fry for another minute to combine.
  5. Remove from heat and serve immediately. Sprinkle with red pepper flakes (if using).
