Ingredients:

  • 1 lb (450 g) Spanish chorizo, sliced into ½-inch rounds
  • 2 tbsp (30 ml) olive oil
  • 1 medium onion, thinly sliced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 2 cloves garlic, minced
  • ½ tsp (2 g) smoked paprika (optional, for extra smoky flavor)
  • Salt and pepper to taste

Instructions:

  1. In a large skillet, heat olive oil over medium heat.
  2. Add sliced chorizo to the skillet and sauté for 5-7 minutes until browned and slightly crispy. Remove and set aside.
  3. In the same skillet, add onions and cook for 3 minutes until beginning to soften. Add the bell peppers and cook for another 5 minutes. Stir in minced garlic and smoked paprika; cook for 1-2 minutes more until fragrant.
  4. Return the chorizo to the skillet, mix well, and season with salt and pepper to taste.
  5. Plate and enjoy warm, garnished with fresh parsley if desired.
