Ingredients:
- 1 lb (450 g) Spanish chorizo, sliced into ½-inch rounds
- 2 tbsp (30 ml) olive oil
- 1 medium onion, thinly sliced
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 2 cloves garlic, minced
- ½ tsp (2 g) smoked paprika (optional, for extra smoky flavor)
- Salt and pepper to taste
Instructions:
- In a large skillet, heat olive oil over medium heat.
- Add sliced chorizo to the skillet and sauté for 5-7 minutes until browned and slightly crispy. Remove and set aside.
- In the same skillet, add onions and cook for 3 minutes until beginning to soften. Add the bell peppers and cook for another 5 minutes. Stir in minced garlic and smoked paprika; cook for 1-2 minutes more until fragrant.
- Return the chorizo to the skillet, mix well, and season with salt and pepper to taste.
- Plate and enjoy warm, garnished with fresh parsley if desired.
