Ingredients:

  • thawed spinach
  • minced garlic
  • Parmesan
  • ground beef
  • panko
  • beaten egg
  • mozzarella pearls
  • oil

Instructions:

  1. Place thawed spinach in a towel and squeeze hard until no more water drips.
  2. Combine minced garlic, squeezed spinach, and Parmesan in a bowl.
  3. Stir in the ground beef, panko, and beaten egg.
  4. Use your hands to incorporate ingredients until just combined.
  5. Scoop about 2 tablespoons of mixture and flatten it in your palm.
  6. Place one mozzarella pearl in the center.
  7. Fold the meat around the cheese until no white is showing.
  8. Heat oil in a skillet and fry for 3 mins per side until a deep brown crust forms.
  9. Place seared balls on a parchment lined baking sheet.
  10. Bake at 400°F (200°C) for 10-12 mins until the internal temp hits 160°F.
