Ingredients:
- thawed spinach

- ground beef
- panko
- beaten egg
- mozzarella pearls

Instructions:
- Place thawed spinach in a towel and squeeze hard until no more water drips.
- Combine minced garlic, squeezed spinach, and Parmesan in a bowl.
- Stir in the ground beef, panko, and beaten egg.
- Use your hands to incorporate ingredients until just combined.
- Scoop about 2 tablespoons of mixture and flatten it in your palm.
- Place one mozzarella pearl in the center.
- Fold the meat around the cheese until no white is showing.
- Heat oil in a skillet and fry for 3 mins per side until a deep brown crust forms.
- Place seared balls on a parchment lined baking sheet.
- Bake at 400°F (200°C) for 10-12 mins until the internal temp hits 160°F.
