Ingredients:

  • 60 ml (2 oz) Gin (London Dry or similar)
  • 30 ml (1 oz) Elderflower Liqueur (St. Germain is a great option)
  • 30 ml (1 oz) Fresh Cucumber Juice (about ½ medium cucumber)
  • 15 ml (½ oz) Fresh Lime Juice
  • 60 ml (2 oz) Sparkling Wine (Prosecco or Cava work beautifully)
  • Cucumber ribbon and edible flower (optional)
  • Ice cubes

Instructions:

  1. Juice ½ medium cucumber using a juicer or blender. If using a blender, blend the cucumber with a splash of water, then strain through a fine-mesh sieve, pressing to extract all the juice.
  2. Fill your chosen cocktail glass with ice to chill it while you prepare the drink.
  3. In a cocktail shaker filled with ice, combine gin, elderflower liqueur, cucumber juice, and lime juice.
  4. Seal the shaker tightly and shake vigorously for 15-20 seconds until well chilled.
  5. Remove ice from the chilled glass. Double strain the cocktail into the glass using a fine-mesh strainer to remove any cucumber pulp or ice shards.
  6. Gently top the cocktail with sparkling wine.
  7. Garnish with a cucumber ribbon (use a vegetable peeler to create thin strips) and an edible flower, if desired. Serve immediately.
