Ingredients:

  • 4 bone-in, skin-on chicken thighs (approximately 6-8 oz/170-225g each)
  • 1 tbsp olive oil (15 ml)
  • Salt and freshly ground black pepper, to taste
  • 1/2 cup orange marmalade (120 ml)
  • 2 tbsp soy sauce (30 ml)
  • 1 tbsp Dijon mustard (15 ml)
  • 1 tbsp apple cider vinegar (15 ml)
  • 1 clove garlic, minced (approx. 1 tsp or 5g)
  • 1/2 tsp ground ginger (approx. 2g)
  • Optional garnish: Fresh parsley, chopped

Instructions:

  1. Preheat oven to 400°F (200°C).
  2. Pat chicken thighs dry with paper towels. Season generously with salt and pepper.
  3. Heat olive oil in the oven-safe skillet over medium-high heat. Sear chicken thighs, skin-side down, for 3-4 minutes until golden brown.
  4. In a small bowl, whisk together marmalade, soy sauce, Dijon mustard, apple cider vinegar, garlic, and ginger.
  5. Pour the marmalade glaze over the chicken thighs, ensuring they are evenly coated.
  6. Bake in the preheated oven for 35-40 minutes, or until the chicken is cooked through and the internal temperature reaches 165°F (74°C) in the thickest part. Baste the chicken with the glaze halfway through cooking.
  7. Let the chicken rest for 5 minutes before serving. Garnish with fresh parsley, if desired. This is a great recipe for chicken thighs!
