Ingredients:
- 4 bone-in, skin-on chicken thighs (approximately 6-8 oz/170-225g each)
- 1 tbsp olive oil (15 ml)
- Salt and freshly ground black pepper, to taste
- 1/2 cup orange marmalade (120 ml)
- 2 tbsp soy sauce (30 ml)
- 1 tbsp Dijon mustard (15 ml)
- 1 tbsp apple cider vinegar (15 ml)
- 1 clove garlic, minced (approx. 1 tsp or 5g)
- 1/2 tsp ground ginger (approx. 2g)
- Optional garnish: Fresh parsley, chopped
Instructions:
- Preheat oven to 400°F (200°C).
- Pat chicken thighs dry with paper towels. Season generously with salt and pepper.
- Heat olive oil in the oven-safe skillet over medium-high heat. Sear chicken thighs, skin-side down, for 3-4 minutes until golden brown.
- In a small bowl, whisk together marmalade, soy sauce, Dijon mustard, apple cider vinegar, garlic, and ginger.
- Pour the marmalade glaze over the chicken thighs, ensuring they are evenly coated.
- Bake in the preheated oven for 35-40 minutes, or until the chicken is cooked through and the internal temperature reaches 165°F (74°C) in the thickest part. Baste the chicken with the glaze halfway through cooking.
- Let the chicken rest for 5 minutes before serving. Garnish with fresh parsley, if desired. This is a great recipe for chicken thighs!
