Ingredients:
- 2 cups fresh strawberries, hulled and sliced (about 300g)
- 2 tablespoons balsamic vinegar (30ml)
- 1 tablespoon honey (15g) or maple syrup for a vegan option
- 1 cup ricotta cheese (250g)
- 1 tablespoon powdered sugar (10g)
- ½ teaspoon vanilla extract (2.5ml)
- Fresh mint leaves (optional)
- Toasted nuts, such as pistachios or almonds (optional)
Instructions:
- Slice the strawberries and place them in a mixing bowl. Drizzle with balsamic vinegar and honey/maple syrup. Gently toss to combine and set aside to marinate.
- In a separate bowl, combine ricotta cheese, powdered sugar, and vanilla extract. Whisk until smooth and creamy.
- In serving bowls or glasses, layer the ricotta mixture at the bottom. Spoon the marinated strawberries on top of the ricotta.
- For a refreshing dessert, cover and chill in the refrigerator for 30 minutes before serving.
- Optional: Add fresh mint leaves and toasted nuts on top for garnish. Serve immediately.
