Ingredients:

  • 2 cups fresh strawberries, hulled and sliced (about 300g)
  • 2 tablespoons balsamic vinegar (30ml)
  • 1 tablespoon honey (15g) or maple syrup for a vegan option
  • 1 cup ricotta cheese (250g)
  • 1 tablespoon powdered sugar (10g)
  • ½ teaspoon vanilla extract (2.5ml)
  • Fresh mint leaves (optional)
  • Toasted nuts, such as pistachios or almonds (optional)

Instructions:

  1. Slice the strawberries and place them in a mixing bowl. Drizzle with balsamic vinegar and honey/maple syrup. Gently toss to combine and set aside to marinate.
  2. In a separate bowl, combine ricotta cheese, powdered sugar, and vanilla extract. Whisk until smooth and creamy.
  3. In serving bowls or glasses, layer the ricotta mixture at the bottom. Spoon the marinated strawberries on top of the ricotta.
  4. For a refreshing dessert, cover and chill in the refrigerator for 30 minutes before serving.
  5. Optional: Add fresh mint leaves and toasted nuts on top for garnish. Serve immediately.
