Ingredients:
- 1 cup (2 sticks/226g) unsalted butter, softened
- 1/2 cup (100g) granulated sugar
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- 2 1/4 cups (281g) all-purpose flour
- 1/2 cup (142g) strawberry jam
- Powdered sugar, for dusting
Instructions:
- In a large bowl, cream together the softened butter, granulated sugar, and salt until light and fluffy.
- Mix in the vanilla extract.
- Gradually add the flour, mixing on low speed until just combined. Be careful not to overmix!
- Wrap the dough in plastic wrap and chill for at least 30 minutes.
- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper or silicone baking mats.
- Roll the chilled dough into 1-inch balls. Place on the prepared baking sheets, leaving space between each cookie.
- Use your thumb or the back of a small spoon to make a small indentation in the center of each cookie.
- Spoon a small amount of strawberry jam into each indentation.
- Bake for 12-15 minutes, or until the edges are lightly golden brown.
- Let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely. Dust with powdered sugar before serving these strawberry kiss cookies.
