Ingredients:
- 4 cups (960 ml) frozen pineapple chunks
- 1 cup (240 ml) unsweetened pineapple juice
- ½ cup (120 ml) coconut cream (full-fat, refrigerated overnight and skimmed; or canned)
- 2 tablespoons (30 ml) lime juice, freshly squeezed
- Optional: Ice cubes, if needed to thicken
- Garnish: Pineapple wedges and maraschino cherries, for serving
Instructions:
- Add frozen pineapple chunks, pineapple juice, coconut cream, and lime juice to the blender.
- Blend until completely smooth and creamy, scraping down the sides as needed.
- If the mixture is too thick, add a splash more pineapple juice. If it's too thin, add a few ice cubes and blend again.
- Pour into glasses.
- Garnish with pineapple wedges and maraschino cherries. Serve immediately and enjoy!
