Ingredients:

  • 4 cups (960 ml) frozen pineapple chunks
  • 1 cup (240 ml) unsweetened pineapple juice
  • ½ cup (120 ml) coconut cream (full-fat, refrigerated overnight and skimmed; or canned)
  • 2 tablespoons (30 ml) lime juice, freshly squeezed
  • Optional: Ice cubes, if needed to thicken
  • Garnish: Pineapple wedges and maraschino cherries, for serving

Instructions:

  1. Add frozen pineapple chunks, pineapple juice, coconut cream, and lime juice to the blender.
  2. Blend until completely smooth and creamy, scraping down the sides as needed.
  3. If the mixture is too thick, add a splash more pineapple juice. If it's too thin, add a few ice cubes and blend again.
  4. Pour into glasses.
  5. Garnish with pineapple wedges and maraschino cherries. Serve immediately and enjoy!
