Ingredients:
- 1 cup (200 g) granulated sugar
- 1 cup (240 ml) water
- 2-3 sticks of cinnamon (approximately 3-5 inches each)
- 1 tsp (5 ml) vanilla extract (optional)
- 1 pinch of salt
Instructions:
- In a medium saucepan, combine sugar and water over medium heat.
- Add the cinnamon sticks and a pinch of salt to the mixture.
- Heat the mixture until it starts to simmer, stirring occasionally to dissolve the sugar.
- Reduce heat to low and let the syrup simmer for 10-15 minutes, allowing the cinnamon to infuse.
- Stir in the vanilla extract if using, and give it a quick swirl.
- Remove from heat and strain the syrup through a fine mesh strainer into your storage container.
- Let it cool before sealing the container. Store in the fridge for up to a month.
