Ingredients:

  • 1 cup (200 g) granulated sugar
  • 1 cup (240 ml) water
  • 2-3 sticks of cinnamon (approximately 3-5 inches each)
  • 1 tsp (5 ml) vanilla extract (optional)
  • 1 pinch of salt

Instructions:

  1. In a medium saucepan, combine sugar and water over medium heat.
  2. Add the cinnamon sticks and a pinch of salt to the mixture.
  3. Heat the mixture until it starts to simmer, stirring occasionally to dissolve the sugar.
  4. Reduce heat to low and let the syrup simmer for 10-15 minutes, allowing the cinnamon to infuse.
  5. Stir in the vanilla extract if using, and give it a quick swirl.
  6. Remove from heat and strain the syrup through a fine mesh strainer into your storage container.
  7. Let it cool before sealing the container. Store in the fridge for up to a month.
