Ingredients:
- 2 cups (300g) raw unsalted peanuts
- 1/2 cup (170g) honey
- 1 tablespoon (15ml) vegetable oil (canola or sunflower oil)
- 1/2 teaspoon salt (adjust to taste)
- 1/4 teaspoon ground cinnamon (optional for added warmth)
- 1/4 teaspoon vanilla extract (optional for flavor depth)
Instructions:
- Preheat the oven to 350°F (175°C).
- Line a baking sheet with parchment paper to prevent sticking.
- Combine honey, vegetable oil, salt, and optional cinnamon and vanilla in a medium saucepan over medium heat.
- Stir the mixture until it begins to bubble and becomes syrupy (about 2-3 minutes).
- Add the peanuts to the saucepan and mix until they are thoroughly coated in the honey mixture.
- Spread the coated peanuts evenly onto the prepared baking sheet.
- Roast in the oven for 20-25 minutes, stirring halfway through, until golden brown.
- Remove from the oven and allow to cool completely on the baking sheet.
- Break apart any clumps once cooled, then store in an airtight container.
