Ingredients:

  • 2 cups (300g) raw unsalted peanuts
  • 1/2 cup (170g) honey
  • 1 tablespoon (15ml) vegetable oil (canola or sunflower oil)
  • 1/2 teaspoon salt (adjust to taste)
  • 1/4 teaspoon ground cinnamon (optional for added warmth)
  • 1/4 teaspoon vanilla extract (optional for flavor depth)

Instructions:

  1. Preheat the oven to 350°F (175°C).
  2. Line a baking sheet with parchment paper to prevent sticking.
  3. Combine honey, vegetable oil, salt, and optional cinnamon and vanilla in a medium saucepan over medium heat.
  4. Stir the mixture until it begins to bubble and becomes syrupy (about 2-3 minutes).
  5. Add the peanuts to the saucepan and mix until they are thoroughly coated in the honey mixture.
  6. Spread the coated peanuts evenly onto the prepared baking sheet.
  7. Roast in the oven for 20-25 minutes, stirring halfway through, until golden brown.
  8. Remove from the oven and allow to cool completely on the baking sheet.
  9. Break apart any clumps once cooled, then store in an airtight container.
