Ingredients:
- 2 large Vidalia onions (or other sweet onions), about 1 lb (450g) total
- 2 tablespoons olive oil (30ml)
- 1 tablespoon balsamic vinegar (15ml)
- 1 teaspoon smoked paprika (5ml)
- ½ teaspoon garlic powder (2.5ml)
- ½ teaspoon salt (2.5ml)
- ¼ teaspoon black pepper (1.25ml)
Instructions:
- Peel the onions and cut them into ½-inch thick slices. Keep the rings intact if possible.
- In a large bowl, whisk together the olive oil, balsamic vinegar, smoked paprika, garlic powder, salt, and pepper. Add the onion slices and toss to coat evenly.
- Preheat your grill to medium heat (about 350-400°F or 175-200°C). Make sure the grill grates are clean.
- Arrange the onion slices on the grill grates in a single layer. Grill for 5-7 minutes per side, or until the onions are softened and slightly charred. Watch carefully to prevent burning.
- If the onions are browning too quickly, move them to a cooler part of the grill or reduce the heat. Continue grilling until they are tender and caramelized. These grilled onions are best served immediately.
- Remove the grilled onions from the grill and serve immediately.
