Ingredients:
- 2 cups fresh strawberries, hulled and sliced
- 1/4 cup granulated sugar
- 1 tablespoon lemon juice, freshly squeezed
- 1 teaspoon vanilla extract (optional)
- Pinch of salt
Instructions:
- Hull and slice the strawberries into quarters or halves depending on their size.
- In a medium saucepan, combine sliced strawberries, sugar, lemon juice, and salt.
- Place the saucepan over medium heat and stir gently to combine, allowing the mixture to come to a gentle simmer.
- Continue to cook for 10-15 minutes, stirring occasionally, until the strawberries break down and the mixture thickens.
- Stir in vanilla extract (if using) and simmer for an additional minute.
- Remove from heat, let cool slightly, then transfer to a jar or container. Chill in the fridge before serving if desired.
