Ingredients:
- 2 cups (250g) all-purpose flour, plus more for dusting the pan
- 1 teaspoon (5g) baking soda
- 1/2 teaspoon (3g) baking powder
- 1/4 teaspoon (1.5g) salt
- 1 cup (240g) plain Greek yogurt (full-fat or low-fat)
- 1/2 cup (120ml) vegetable oil (canola or sunflower oil work well)
- 3/4 cup (150g) granulated sugar
- 2 large eggs
- 1 teaspoon (5ml) vanilla extract
- Optional: 1/2 cup (75g) chopped nuts (walnuts, pecans), chocolate chips, or dried fruit
Instructions:
- Preheat oven to 350°F (175°C). Grease and flour the loaf pan.
- In a large bowl, whisk together flour, baking soda, baking powder, and salt.
- In a separate bowl, whisk together Greek yogurt, oil, sugar, eggs, and vanilla extract until smooth.
- Gradually add the wet ingredients to the dry ingredients, mixing until just combined. Be careful not to overmix! Fold in any optional add-ins (nuts, chocolate chips, etc.).
- Pour the batter into the prepared loaf pan and spread evenly.
- Bake for 45-55 minutes, or until a wooden skewer inserted into the center comes out clean (or with just a few moist crumbs).
- Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
