Ingredients:

  • 2 cups (250g) all-purpose flour, plus more for dusting the pan
  • 1 teaspoon (5g) baking soda
  • 1/2 teaspoon (3g) baking powder
  • 1/4 teaspoon (1.5g) salt
  • 1 cup (240g) plain Greek yogurt (full-fat or low-fat)
  • 1/2 cup (120ml) vegetable oil (canola or sunflower oil work well)
  • 3/4 cup (150g) granulated sugar
  • 2 large eggs
  • 1 teaspoon (5ml) vanilla extract
  • Optional: 1/2 cup (75g) chopped nuts (walnuts, pecans), chocolate chips, or dried fruit

Instructions:

  1. Preheat oven to 350°F (175°C). Grease and flour the loaf pan.
  2. In a large bowl, whisk together flour, baking soda, baking powder, and salt.
  3. In a separate bowl, whisk together Greek yogurt, oil, sugar, eggs, and vanilla extract until smooth.
  4. Gradually add the wet ingredients to the dry ingredients, mixing until just combined. Be careful not to overmix! Fold in any optional add-ins (nuts, chocolate chips, etc.).
  5. Pour the batter into the prepared loaf pan and spread evenly.
  6. Bake for 45-55 minutes, or until a wooden skewer inserted into the center comes out clean (or with just a few moist crumbs).
  7. Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
