Ingredients:

  • 2 oz (60 ml) London Dry Gin (Beefeater, Tanqueray, or similar)
  • 1 oz (30 ml) Freshly squeezed lemon juice
  • ¾ oz (22.5 ml) Simple syrup (equal parts sugar and water, simmered until dissolved and cooled)
  • 1 large Egg white (optional, for a richer texture)
  • 4-6 oz (120-180 ml) Chilled Soda water
  • Lemon slice, for garnish
  • Ice cubes

Instructions:

  1. Place highball or collins glass in the freezer for a few minutes, or fill with ice while preparing the drink. Chill Glass.
  2. In a cocktail shaker, combine gin, lemon juice, simple syrup, and egg white (if using). Combine Ingredients (Shake).
  3. If using egg white, dry shake (without ice) vigorously for 15-20 seconds to emulsify the egg white and create a frothy texture. Dry Shake (Optional, but Recommended).
  4. Add ice to the shaker and shake again until well-chilled (about 15-20 seconds). Add Ice (Shake Again).
  5. Double strain (using both a Hawthorne and fine-mesh strainer) into the chilled glass filled with ice. Strain.
  6. Top with soda water, leaving about an inch of space at the top. Top with Soda Water.
  7. Garnish with a lemon slice. Garnish.
  8. Give a gentle stir to combine the ingredients. Gentle Stir.
