Ingredients:
- 2 oz (60 ml) London Dry Gin (Beefeater, Tanqueray, or similar)
- 1 oz (30 ml) Freshly squeezed lemon juice
- ¾ oz (22.5 ml) Simple syrup (equal parts sugar and water, simmered until dissolved and cooled)
- 1 large Egg white (optional, for a richer texture)
- 4-6 oz (120-180 ml) Chilled Soda water
- Lemon slice, for garnish
- Ice cubes
Instructions:
- Place highball or collins glass in the freezer for a few minutes, or fill with ice while preparing the drink. Chill Glass.
- In a cocktail shaker, combine gin, lemon juice, simple syrup, and egg white (if using). Combine Ingredients (Shake).
- If using egg white, dry shake (without ice) vigorously for 15-20 seconds to emulsify the egg white and create a frothy texture. Dry Shake (Optional, but Recommended).
- Add ice to the shaker and shake again until well-chilled (about 15-20 seconds). Add Ice (Shake Again).
- Double strain (using both a Hawthorne and fine-mesh strainer) into the chilled glass filled with ice. Strain.
- Top with soda water, leaving about an inch of space at the top. Top with Soda Water.
- Garnish with a lemon slice. Garnish.
- Give a gentle stir to combine the ingredients. Gentle Stir.
