Ingredients:
- 2 oz (60ml) Gin (London Dry or Old Tom)
- 1 oz (30ml) Fresh Lemon Juice
- 0.75 oz (22ml) Simple Syrup
- 1 Large Egg White (Optional)
- 4 oz (120ml) Chilled Soda Water
- Lemon Wheel or Wedge, for garnish
Instructions:
- Place your collins or highball glass in the freezer or fill it with ice while you prepare the drink.
- In a cocktail shaker, combine the gin, lemon juice, simple syrup, and egg white (if using).
- Without ice, shake vigorously for 15-20 seconds to emulsify the egg white (if using).
- Add ice to the shaker and shake again until well-chilled (about 15-20 seconds).
- Strain the mixture into the chilled glass.
- Fill the glass with chilled soda water. Pour slowly to maintain the foam if you used egg white.
- Garnish with a lemon wheel or wedge.
- Sip and savor.
