Ingredients:

  • 2 oz (60ml) Gin (London Dry or Old Tom)
  • 1 oz (30ml) Fresh Lemon Juice
  • 0.75 oz (22ml) Simple Syrup
  • 1 Large Egg White (Optional)
  • 4 oz (120ml) Chilled Soda Water
  • Lemon Wheel or Wedge, for garnish

Instructions:

  1. Place your collins or highball glass in the freezer or fill it with ice while you prepare the drink.
  2. In a cocktail shaker, combine the gin, lemon juice, simple syrup, and egg white (if using).
  3. Without ice, shake vigorously for 15-20 seconds to emulsify the egg white (if using).
  4. Add ice to the shaker and shake again until well-chilled (about 15-20 seconds).
  5. Strain the mixture into the chilled glass.
  6. Fill the glass with chilled soda water. Pour slowly to maintain the foam if you used egg white.
  7. Garnish with a lemon wheel or wedge.
  8. Sip and savor.
