Ingredients:

  • 2 oz (60 ml) Pisco (Quebranta variety recommended)
  • 1 oz (30 ml) Freshly Squeezed Lime Juice
  • 1 oz (30 ml) Simple Syrup (equal parts sugar and water, heated until dissolved and cooled)
  • 1 Large Egg White (pasteurized if preferred for safety)
  • 3-4 Drops Angostura Bitters
  • Ice Cubes

Instructions:

  1. Place your cocktail glass in the freezer to chill while you prepare the drink.
  2. In a cocktail shaker, combine the pisco, lime juice, simple syrup, and egg white.
  3. Close the shaker tightly and shake without ice for 15-20 seconds.
  4. Add ice cubes to the shaker. Close it tightly and shake vigorously for another 15-20 seconds until well-chilled.
  5. Remove the chilled glass from the freezer. Double strain the mixture into the glass using the Hawthorne strainer.
  6. Carefully add 3-4 drops of Angostura bitters on top of the foam. Serve immediately.
