Ingredients:
- 2 oz (60 ml) Pisco (Quebranta variety recommended)
- 1 oz (30 ml) Freshly Squeezed Lime Juice
- 1 oz (30 ml) Simple Syrup (equal parts sugar and water, heated until dissolved and cooled)
- 1 Large Egg White (pasteurized if preferred for safety)
- 3-4 Drops Angostura Bitters
- Ice Cubes
Instructions:
- Place your cocktail glass in the freezer to chill while you prepare the drink.
- In a cocktail shaker, combine the pisco, lime juice, simple syrup, and egg white.
- Close the shaker tightly and shake without ice for 15-20 seconds.
- Add ice cubes to the shaker. Close it tightly and shake vigorously for another 15-20 seconds until well-chilled.
- Remove the chilled glass from the freezer. Double strain the mixture into the glass using the Hawthorne strainer.
- Carefully add 3-4 drops of Angostura bitters on top of the foam. Serve immediately.
