Ingredients:
- 1 ¼ cups (150g) all-purpose flour, plus more for dusting
- ½ teaspoon (2.5ml) salt
- ½ cup (1 stick, 113g) unsalted butter, chilled and cut into cubes
- 3-5 tablespoons (45-75ml) ice water
- ½ cup (1 stick, 113g) unsalted butter, melted and cooled slightly
- 1 cup (200g) granulated sugar
- 1 cup (200g) packed light brown sugar
- 4 large eggs
- 1 teaspoon (5ml) vanilla extract
- 2 tablespoons (30ml) bourbon (optional, but highly recommended!)
- 1 cup (100g) semi-sweet chocolate chips
- 1 cup (100g) chopped pecans
- ¼ teaspoon (1.25ml) salt
Instructions:
- Combine flour and salt. Cut in butter until mixture resembles coarse crumbs.
- Gradually add ice water, mixing until dough comes together.
- Form dough into a disc, wrap in plastic, and chill for at least 30 minutes.
- Preheat oven to 350°F (175°C).
- Roll out dough on a lightly floured surface and transfer to pie plate.
- Crimp edges.
- Line crust with parchment paper or foil and fill with pie weights or dried beans.
- Bake for 15 minutes. Remove weights and bake for another 5-10 minutes, or until lightly golden.
- In a large bowl, whisk together melted butter, granulated sugar, and brown sugar.
- Whisk in eggs one at a time, then add vanilla and bourbon (if using).
- Stir in chocolate chips, pecans, and salt.
- Pour filling into the pre-baked pie crust.
- Bake for 50-60 minutes, or until the filling is set but still slightly jiggly in the center.
- Let cool completely on a wire rack before slicing and serving this Kentucky Derby Pie.
