Ingredients:

  • 1 ¼ cups (150g) all-purpose flour, plus more for dusting
  • ½ teaspoon (2.5ml) salt
  • ½ cup (1 stick, 113g) unsalted butter, chilled and cut into cubes
  • 3-5 tablespoons (45-75ml) ice water
  • ½ cup (1 stick, 113g) unsalted butter, melted and cooled slightly
  • 1 cup (200g) granulated sugar
  • 1 cup (200g) packed light brown sugar
  • 4 large eggs
  • 1 teaspoon (5ml) vanilla extract
  • 2 tablespoons (30ml) bourbon (optional, but highly recommended!)
  • 1 cup (100g) semi-sweet chocolate chips
  • 1 cup (100g) chopped pecans
  • ¼ teaspoon (1.25ml) salt

Instructions:

  1. Combine flour and salt. Cut in butter until mixture resembles coarse crumbs.
  2. Gradually add ice water, mixing until dough comes together.
  3. Form dough into a disc, wrap in plastic, and chill for at least 30 minutes.
  4. Preheat oven to 350°F (175°C).
  5. Roll out dough on a lightly floured surface and transfer to pie plate.
  6. Crimp edges.
  7. Line crust with parchment paper or foil and fill with pie weights or dried beans.
  8. Bake for 15 minutes. Remove weights and bake for another 5-10 minutes, or until lightly golden.
  9. In a large bowl, whisk together melted butter, granulated sugar, and brown sugar.
  10. Whisk in eggs one at a time, then add vanilla and bourbon (if using).
  11. Stir in chocolate chips, pecans, and salt.
  12. Pour filling into the pre-baked pie crust.
  13. Bake for 50-60 minutes, or until the filling is set but still slightly jiggly in the center.
  14. Let cool completely on a wire rack before slicing and serving this Kentucky Derby Pie.
