Ingredients:

  • 16 ounces (450g) refried beans (canned, smooth or chunky)
  • 1 teaspoon chili powder (5ml)
  • 1/2 teaspoon cumin (2.5ml)
  • 3 ripe avocados
  • 1/4 cup (60ml) red onion, finely diced
  • 2 tablespoons (30ml) cilantro, chopped
  • 1 jalapeno, seeded and minced (optional)
  • 2 tablespoons (30ml) lime juice
  • Salt and pepper to taste
  • 16 ounces (450g) sour cream
  • 1 packet (1 ounce/28g) taco seasoning
  • 16 ounces (450g) salsa (your favourite kind - mild, medium, or hot)
  • 1 pound (450g) ground beef
  • 1 tablespoon (15ml) taco seasoning
  • 1 cup (120g) cheddar cheese, shredded
  • 1/2 cup (75g) black olives, sliced
  • 2 Roma tomatoes, diced
  • 1/4 cup (60ml) green onions, sliced

Instructions:

  1. In a small bowl, combine refried beans, chili powder, and cumin. Mix well.
  2. Mash avocados in a bowl. Add red onion, cilantro, jalapeno (if using), lime juice, salt, and pepper. Mix well.
  3. Combine sour cream and taco seasoning in a small bowl. Mix well.
  4. If using, brown ground beef in a skillet over medium heat. Drain off any excess grease. Stir in taco seasoning.
  5. Spread the refried bean mixture evenly across the bottom of the serving dish.
  6. Spread the guacamole evenly over the refried beans.
  7. Spread the seasoned sour cream evenly over the guacamole.
  8. Pour the salsa evenly over the sour cream.
  9. If using, spread the ground beef evenly over the salsa.
  10. Sprinkle the cheddar cheese over the top.
  11. Garnish with black olives, diced tomatoes, and green onions.
  12. Cover the dip with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld.
