Ingredients:
- 2 cups (250g) all-purpose flour, plus more for dusting the pan
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup (2 sticks, 226g) unsalted butter, softened
- 1 3/4 cups (350g) granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup (240ml) buttermilk
- 8 ounces (227g) cream cheese, softened
- 1/2 cup (113g) unsalted butter, softened
- 1/2 cup (60g) powdered sugar
- 1 (20 ounce) can crushed pineapple, well-drained (about 1 3/4 cups or 400g)
- 3 medium bananas, sliced
- 1 pint (approx. 2 cups or 280g) fresh strawberries, hulled and sliced
- 1/2 cup (85g) chocolate syrup
- 1 1/2 cups (360ml) heavy cream
- 1/4 cup (30g) powdered sugar
- 1 teaspoon vanilla extract
- Maraschino cherries, for garnish
- Chopped nuts (pecans or walnuts), for garnish (optional)
Instructions:
- Preheat oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan.
- In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
- In a large bowl, cream together butter and sugar until light and fluffy.
- Beat in eggs one at a time, then stir in vanilla extract.
- Gradually add dry ingredients to the wet ingredients, alternating with the buttermilk, beginning and ending with the dry ingredients. Mix until just combined. Do not overmix.
- Pour batter into the prepared pan and bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
- Let cake cool in the pan for 10 minutes before inverting it onto a wire rack to cool completely.
- In a large bowl, beat cream cheese and butter together until smooth and creamy.
- Gradually beat in powdered sugar until smooth. Stir in well-drained crushed pineapple.
- Cover and refrigerate filling for at least 1 hour to allow it to firm up.
- Spread chilled pineapple cream filling evenly over the cooled cake.
- Arrange sliced bananas and strawberries over the filling. Drizzle with chocolate syrup.
- In a chilled bowl, whip heavy cream with powdered sugar and vanilla extract until stiff peaks form.
- Spread whipped cream evenly over the fruit. Garnish with maraschino cherries and chopped nuts (if using).
- Chill for at least 30 minutes before serving.
