Ingredients:

  • 3 cups (400g) frozen pineapple chunks
  • 1 cup (240ml) pineapple juice, chilled
  • ½ cup (120ml) unsweetened coconut cream, chilled (not coconut milk)
  • ¼ cup (60ml) white rum (optional)
  • 2 tablespoons (30ml) lime juice, freshly squeezed
  • Optional: Sugar or simple syrup to taste (start with 1 tablespoon/15ml)
  • Garnish: Pineapple wedges, maraschino cherries

Instructions:

  1. Gather all ingredients. If your pineapple isn't frozen, freeze it for at least 2 hours for a thicker consistency.
  2. Add the frozen pineapple, pineapple juice, coconut cream, rum (if using), and lime juice to the blender.
  3. Blend on high speed until completely smooth. You may need to stop and scrape down the sides of the blender a couple of times.
  4. Taste the Piña Colada and add sugar or simple syrup if desired, blending again to combine.
  5. Pour into chilled glasses. Garnish with pineapple wedges and maraschino cherries. Cheers to delicious frozen pina coladas!
