Ingredients:
- 4 pork sausages (about 450g)
- 4 slices of back bacon (about 200g)
- 2 black puddings (about 250g)
- 2 white puddings (about 250g)
- 4 large eggs
- 1 can of baked beans (400g)
- 2 slices of soda bread
- 1-2 fresh tomatoes, halved
- 1 tablespoon of unsalted butter (15g)
- Olive oil (for frying, as needed)
- Salt and pepper (to taste)
Instructions:
- Gather all components, including the sausages, bacon, puddings, and eggs.
- Heat olive oil in a frying pan over medium heat and add sausages. Cook for about 15 minutes, turning until golden brown.
- In the same or another pan, add the bacon slices. Cook until crispy, about 4-5 minutes, then set aside.
- Slice black and white puddings into rounds. Cook in the bacon fat for about 3-4 minutes on each side until crisp.
- In a separate pan, add the butter and heat. Crack eggs into the pan and cook to your desired doneness.
- Open the baked beans and warm them in a small pot over medium heat.
- Lightly toast the slices of soda bread on the griddle or in a toaster.
- Place the halved fresh tomatoes in the frying pan for about 2 minutes until warmed.
- Arrange all cooked components on warm plates. Season with salt and pepper to taste.
