Ingredients:

  • 4 pork sausages (about 450g)
  • 4 slices of back bacon (about 200g)
  • 2 black puddings (about 250g)
  • 2 white puddings (about 250g)
  • 4 large eggs
  • 1 can of baked beans (400g)
  • 2 slices of soda bread
  • 1-2 fresh tomatoes, halved
  • 1 tablespoon of unsalted butter (15g)
  • Olive oil (for frying, as needed)
  • Salt and pepper (to taste)

Instructions:

  1. Gather all components, including the sausages, bacon, puddings, and eggs.
  2. Heat olive oil in a frying pan over medium heat and add sausages. Cook for about 15 minutes, turning until golden brown.
  3. In the same or another pan, add the bacon slices. Cook until crispy, about 4-5 minutes, then set aside.
  4. Slice black and white puddings into rounds. Cook in the bacon fat for about 3-4 minutes on each side until crisp.
  5. In a separate pan, add the butter and heat. Crack eggs into the pan and cook to your desired doneness.
  6. Open the baked beans and warm them in a small pot over medium heat.
  7. Lightly toast the slices of soda bread on the griddle or in a toaster.
  8. Place the halved fresh tomatoes in the frying pan for about 2 minutes until warmed.
  9. Arrange all cooked components on warm plates. Season with salt and pepper to taste.
