Ingredients:

  • 4 oz Cream Cheese, full-fat, softened
  • 1 tablespoon Fresh Orange Zest (from 1 large orange)
  • 1/4 cup Fresh Orange Juice
  • 1 box Instant Vanilla Pudding Mix (3.4 oz)
  • 1 large tub Frozen Whipped Topping, thawed (16 oz)
  • 2 cans Canned Mandarin Oranges, thoroughly drained (approx. 850g total)
  • 1 cup Mini Marshmallows
  • Fresh Orange Slices or Zest (for optional garnish)

Instructions:

  1. Drain the Oranges: Empty the two cans of mandarin oranges into a fine-mesh sieve or colander set over a bowl. Allow them to drain completely for at least 15 minutes. Gently pat the segments with paper towels to remove residual moisture.
  2. Prep the Zest: Zest the orange, ensuring you only take the bright orange outer layer, avoiding the bitter white pith.
  3. Cream the Cheese: In a large mixing bowl, beat the softened cream cheese until smooth and lump-free (about 2 minutes). Use a handheld mixer on medium speed if available.
  4. Incorporate Flavour: Gradually mix in the orange zest and the fresh orange juice until well combined. The mixture should be thick and glossy.
  5. Add Pudding: Reduce the mixer speed to low and slowly incorporate the dry instant vanilla pudding mix until just combined. The mixture will immediately thicken. Stop mixing once all powder is incorporated.
  6. Fold in Whipped Topping: Using a large rubber spatula, gently fold in half of the thawed whipped topping until mostly incorporated. Add the remaining topping and fold gently until no streaks of white remain, being careful not to deflate the mixture.
  7. Add Fruit and Marshmallows: Gently fold the thoroughly drained mandarin orange segments and the mini marshmallows into the fluff mixture. Mix only until everything is evenly distributed.
  8. Chill to Set: Transfer the mixture into a decorative serving bowl or individual dishes. Cover tightly with plastic wrap and refrigerate for a minimum of 2 hours, but preferably 4 hours or overnight. This allows the pudding to fully activate and stabilize the fluff.
  9. Serve: Just before serving, garnish with additional orange zest or a few fresh orange slices.
