Ingredients:
- 1 cup (2 sticks/227g) Unsalted Butter, softened
- 1 cup (200g) Packed Brown Sugar
- ½ cup (100g) Granulated Sugar
- 2 Large Eggs
- 1 tsp (5ml) Pure Vanilla Extract
- 1 ½ cups (180g) All-Purpose Flour
- 1 tsp (5g) Baking Soda
- 1 tsp (2g) Ground Cinnamon
- ½ tsp (3g) Salt
- 3 cups (240g) Old-Fashioned Oats (Rolled Oats)
- 1 cup (170g) Raisins (or chocolate chips, chopped nuts, dried cranberries, etc.)
Instructions:
- Beat softened butter with brown sugar and granulated sugar until light and fluffy.
- Add eggs one at a time, mixing well after each addition. Stir in vanilla extract.
- In a separate bowl, whisk together flour, baking soda, cinnamon, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix!
- Gently fold in the old-fashioned oats and your chosen mix-ins (raisins, chocolate chips, nuts, etc.).
- Cover the dough and let it rest for 10 minutes at room temperature (optional).
- Drop rounded tablespoons of dough onto ungreased (or parchment-lined) cookie sheets, spacing about 2 inches apart.
- Bake at 350°F (175°C) for 10-12 minutes, or until the edges are golden brown and the centers are just set.
- Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
