Ingredients:

  • 1 cup (2 sticks/227g) Unsalted Butter, softened
  • 1 cup (200g) Packed Brown Sugar
  • ½ cup (100g) Granulated Sugar
  • 2 Large Eggs
  • 1 tsp (5ml) Pure Vanilla Extract
  • 1 ½ cups (180g) All-Purpose Flour
  • 1 tsp (5g) Baking Soda
  • 1 tsp (2g) Ground Cinnamon
  • ½ tsp (3g) Salt
  • 3 cups (240g) Old-Fashioned Oats (Rolled Oats)
  • 1 cup (170g) Raisins (or chocolate chips, chopped nuts, dried cranberries, etc.)

Instructions:

  1. Beat softened butter with brown sugar and granulated sugar until light and fluffy.
  2. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract.
  3. In a separate bowl, whisk together flour, baking soda, cinnamon, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix!
  5. Gently fold in the old-fashioned oats and your chosen mix-ins (raisins, chocolate chips, nuts, etc.).
  6. Cover the dough and let it rest for 10 minutes at room temperature (optional).
  7. Drop rounded tablespoons of dough onto ungreased (or parchment-lined) cookie sheets, spacing about 2 inches apart.
  8. Bake at 350°F (175°C) for 10-12 minutes, or until the edges are golden brown and the centers are just set.
  9. Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
