Ingredients:
- 1 lb (450g) ground pork (sausage meat)
- 1 tsp (5ml) dried sage
- 1/2 tsp (2.5ml) dried thyme
- 1/4 tsp (1.25ml) black pepper
- 1/4 tsp (1.25ml) salt
- 1 tbsp (15ml) olive oil
- 6 large eggs
- 2 tbsp (30ml) milk or cream
- Salt and pepper to taste
- 6 English muffins, split
- 6 slices cheddar cheese
- 2 tbsp (30ml) unsalted butter, melted
Instructions:
- Combine ground pork with sage, thyme, salt, and pepper. Mix well and form into 6 equal-sized patties.
- Heat olive oil in a large skillet over medium heat. Cook sausage patties for about 5-7 minutes per side, or until cooked through and browned. Set aside.
- Whisk eggs with milk or cream, salt, and pepper in a bowl.
- Using egg rings (if using), pour the egg mixture into the skillet (with a little bit of oil if needed). Cook until the eggs are set but still slightly soft on top. If not using rings, scramble the eggs to your preferred level of doneness.
- Brush the cut sides of the English muffins with melted butter. Toast until golden brown and crispy.
- Place a slice of cheese on the bottom half of each muffin. Top with a sausage patty and an egg. Finish with the top half of the muffin.
- Serve immediately and enjoy!
