Ingredients:
- 24 Italian ladyfingers (savoiardi), about 3 inches long
- 1 cup (240 ml) strong brewed coffee, cooled
- 2 tablespoons coffee liqueur (such as Kahlúa) or Marsala wine (30ml)
- 8 ounces (227g) mascarpone cheese, softened
- 1 cup (240 ml) heavy cream, cold
- ½ cup (100g) granulated sugar
- 1 teaspoon vanilla extract (5ml)
- 2 tablespoons unsweetened cocoa powder (approx. 15g)
Instructions:
- Combine cooled coffee and coffee liqueur (or Marsala) in a shallow dish.
- In a large bowl, beat mascarpone, heavy cream, sugar, and vanilla extract with an electric mixer until light and fluffy, forming soft peaks. Be careful not to overbeat.
- Quickly dip each ladyfinger into the coffee mixture, ensuring it's soaked but not soggy.
- Spoon or pipe a dollop of mascarpone cream onto each dipped ladyfinger.
- Top each cream-topped ladyfinger with another coffee-soaked ladyfinger, creating a sandwich.
- Arrange the tiramisu bites on a platter and refrigerate for at least 30 minutes to allow the flavors to meld and the cream to set.
- Just before serving, dust the bites generously with cocoa powder.
