Ingredients:
- 2 large English muffins (200g)
- 1 ripe avocado (150g)
- 1 tablespoon fresh lemon juice (15 ml)
- 1 pinch sea salt
- 1 tablespoon extra-virgin olive oil (15 ml)
- 1 ounce high-quality caviar (28g)
- Fresh chives, finely chopped (optional garnish)
Instructions:
- Split the English muffins in half and toast until golden brown in a toaster or toaster oven.
- Cut the avocado in half, remove the pit, and scoop the flesh into a bowl. Add lemon juice and a pinch of sea salt, then mash with a fork until smooth but still slightly chunky.
- Drizzle the toasted muffin halves with olive oil and spread a generous layer of the avocado mixture over each half.
- Gently place an ounce of caviar atop the avocado on each muffin. Garnish with chopped chives if using.
- Enjoy while still warm.
