Ingredients:

  • 2 large English muffins (200g)
  • 1 ripe avocado (150g)
  • 1 tablespoon fresh lemon juice (15 ml)
  • 1 pinch sea salt
  • 1 tablespoon extra-virgin olive oil (15 ml)
  • 1 ounce high-quality caviar (28g)
  • Fresh chives, finely chopped (optional garnish)

Instructions:

  1. Split the English muffins in half and toast until golden brown in a toaster or toaster oven.
  2. Cut the avocado in half, remove the pit, and scoop the flesh into a bowl. Add lemon juice and a pinch of sea salt, then mash with a fork until smooth but still slightly chunky.
  3. Drizzle the toasted muffin halves with olive oil and spread a generous layer of the avocado mixture over each half.
  4. Gently place an ounce of caviar atop the avocado on each muffin. Garnish with chopped chives if using.
  5. Enjoy while still warm.
