Ingredients:

  • 4 English muffins, split (about 225g total)
  • 2 tablespoons unsalted butter, softened (30g)
  • 2 cups fresh strawberries, hulled and sliced (about 300g)
  • 2 tablespoons honey or maple syrup (30ml)
  • 1 tablespoon lemon juice (15ml)
  • 1 cup mascarpone cheese (250g)
  • 2 tablespoons powdered sugar (15g)
  • 1 teaspoon vanilla extract (5ml)

Instructions:

  1. Hull and slice fresh strawberries. In a bowl, mix strawberries with honey/maple syrup and lemon juice. Let marinate for 10 minutes.
  2. In a mixing bowl, combine mascarpone cheese, powdered sugar, and vanilla extract. Whisk until smooth and creamy.
  3. Preheat toaster or oven to 350°F (175°C). Spread softened butter on each half of the English muffins. Toast until golden brown and crispy.
  4. Spread the creamy mixture on each toasted muffin. Top with the marinated strawberries and serve immediately.
