Ingredients:
- 4 English muffins, split (about 225g total)
- 2 tablespoons unsalted butter, softened (30g)
- 2 cups fresh strawberries, hulled and sliced (about 300g)
- 2 tablespoons honey or maple syrup (30ml)
- 1 tablespoon lemon juice (15ml)
- 1 cup mascarpone cheese (250g)
- 2 tablespoons powdered sugar (15g)
- 1 teaspoon vanilla extract (5ml)
Instructions:
- Hull and slice fresh strawberries. In a bowl, mix strawberries with honey/maple syrup and lemon juice. Let marinate for 10 minutes.
- In a mixing bowl, combine mascarpone cheese, powdered sugar, and vanilla extract. Whisk until smooth and creamy.
- Preheat toaster or oven to 350°F (175°C). Spread softened butter on each half of the English muffins. Toast until golden brown and crispy.
- Spread the creamy mixture on each toasted muffin. Top with the marinated strawberries and serve immediately.
