Ingredients:

  • 2 cups (475ml) Pineapple Juice, chilled
  • 1 cup (240ml) Coconut Cream (not coconut milk), chilled
  • 1/2 cup (120ml) Crushed Ice (or ice cubes)
  • 2 tbsp (30ml) Lime Juice, freshly squeezed
  • Optional: Pineapple wedges and maraschino cherries for garnish

Instructions:

  1. In a blender, add the pineapple juice, coconut cream, crushed ice, and lime juice.
  2. Blend on high speed until smooth and creamy, about 20-30 seconds. If you prefer a thicker consistency, add more ice.
  3. Taste the mixture and adjust sweetness by adding a little simple syrup (or a splash more pineapple juice) if needed. Adjust tartness by adding a bit more lime juice.
  4. For an even colder drink, transfer the mixture to the refrigerator and chill for at least 15 minutes (optional).
  5. Pour into two glasses. Garnish with pineapple wedges and maraschino cherries, if desired.
