Ingredients:
- 2 cups (475ml) Pineapple Juice, chilled
- 1 cup (240ml) Coconut Cream (not coconut milk), chilled
- 1/2 cup (120ml) Crushed Ice (or ice cubes)
- 2 tbsp (30ml) Lime Juice, freshly squeezed
- Optional: Pineapple wedges and maraschino cherries for garnish
Instructions:
- In a blender, add the pineapple juice, coconut cream, crushed ice, and lime juice.
- Blend on high speed until smooth and creamy, about 20-30 seconds. If you prefer a thicker consistency, add more ice.
- Taste the mixture and adjust sweetness by adding a little simple syrup (or a splash more pineapple juice) if needed. Adjust tartness by adding a bit more lime juice.
- For an even colder drink, transfer the mixture to the refrigerator and chill for at least 15 minutes (optional).
- Pour into two glasses. Garnish with pineapple wedges and maraschino cherries, if desired.
