Ingredients:

  • 2 cups (280g) frozen pineapple chunks
  • ½ cup (120ml) unsweetened pineapple juice
  • ¼ cup (60ml) cream of coconut (Coco Lopez preferred)
  • ¼ cup (60ml) white rum (optional)
  • 1 cup (240ml) ice cubes
  • Pineapple wedges (optional garnish)
  • Maraschino cherries (optional garnish)

Instructions:

  1. Add frozen pineapple, pineapple juice, cream of coconut, and rum (if using) to the blender.
  2. Add the ice cubes.
  3. Blend on high speed until smooth and creamy, adding more ice if needed to reach the desired consistency.
  4. Taste and add a touch of simple syrup or agave nectar if desired.
  5. Pour into serving glasses and garnish with pineapple wedges and maraschino cherries.
