Ingredients:

  • 1 1/2 oz (45 ml) Dark Rum (e.g., Appleton Estate Signature Blend)
  • 3/4 oz (22 ml) Campari
  • 4 1/2 oz (133 ml) Pineapple Juice
  • 1/2 oz (15 ml) Fresh Lime Juice
  • 1/2 oz (15 ml) Simple Syrup (equal parts sugar and water, heated until dissolved)
  • 1 Pineapple wedge or cherry for garnish (optional)

Instructions:

  1. Fill a rocks glass or tiki mug with ice.
  2. Add the dark rum, Campari, pineapple juice, lime juice, and simple syrup to a cocktail shaker.
  3. Fill the shaker with ice. Seal tightly and shake vigorously until well-chilled (about 15-20 seconds).
  4. Strain the cocktail into the prepared glass.
  5. Garnish with a pineapple wedge or a cherry. Serve immediately.
