Ingredients:
- 1 1/2 oz (45 ml) Dark Rum (e.g., Appleton Estate Signature Blend)
- 3/4 oz (22 ml) Campari
- 4 1/2 oz (133 ml) Pineapple Juice
- 1/2 oz (15 ml) Fresh Lime Juice
- 1/2 oz (15 ml) Simple Syrup (equal parts sugar and water, heated until dissolved)
- 1 Pineapple wedge or cherry for garnish (optional)
Instructions:
- Fill a rocks glass or tiki mug with ice.
- Add the dark rum, Campari, pineapple juice, lime juice, and simple syrup to a cocktail shaker.
- Fill the shaker with ice. Seal tightly and shake vigorously until well-chilled (about 15-20 seconds).
- Strain the cocktail into the prepared glass.
- Garnish with a pineapple wedge or a cherry. Serve immediately.
