Ingredients:

  • 4 large eggs
  • 1 cup coconut milk
  • 1 tablespoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 8 slices of thick bread (such as brioche or challah)
  • 2 ripe bananas, sliced
  • 2 tablespoons unsalted butter
  • 1/4 cup shredded coconut, toasted
  • Maple syrup, for serving (optional)

Instructions:

  1. In a mixing bowl, whisk together the eggs, coconut milk, vanilla extract, and cinnamon until well combined.
  2. Pour the egg mixture into a shallow dish.
  3. Dip each slice of bread into the egg mixture, coating both sides, and allow excess to drip off.
  4. Heat a non-stick skillet over medium heat and melt 1 tablespoon of butter.
  5. Cook the soaked bread slices in the skillet for 3-4 minutes per side, or until golden brown.
  6. In a separate pan, melt the remaining butter and add the banana slices; sauté until caramelized, about 2-3 minutes.
  7. Plate the French toast, top with the caramelized bananas and sprinkle with toasted coconut.
  8. Serve warm with maple syrup, if desired.
