Ingredients:
- 4 large eggs
- 1 cup coconut milk
- 1 tablespoon vanilla extract
- 1 teaspoon ground cinnamon
- 8 slices of thick bread (such as brioche or challah)
- 2 ripe bananas, sliced
- 2 tablespoons unsalted butter
- 1/4 cup shredded coconut, toasted
- Maple syrup, for serving (optional)
Instructions:
- In a mixing bowl, whisk together the eggs, coconut milk, vanilla extract, and cinnamon until well combined.
- Pour the egg mixture into a shallow dish.
- Dip each slice of bread into the egg mixture, coating both sides, and allow excess to drip off.
- Heat a non-stick skillet over medium heat and melt 1 tablespoon of butter.
- Cook the soaked bread slices in the skillet for 3-4 minutes per side, or until golden brown.
- In a separate pan, melt the remaining butter and add the banana slices; sauté until caramelized, about 2-3 minutes.
- Plate the French toast, top with the caramelized bananas and sprinkle with toasted coconut.
- Serve warm with maple syrup, if desired.
