Ingredients:
- 1 lb ground turkey (93% lean)
- 1 tbsp extra virgin olive oil
- 1.5 tsp kosher salt
- 1 tsp rubbed sage
- 1 tsp dried thyme
- 0.5 tsp smoked paprika
- 0.5 tsp crushed fennel seeds
- 0.25 tsp red pepper flakes
- 0.5 tsp garlic powder
- 0.5 tsp onion powder
- 1 tbsp pure maple syrup
- 0.5 tsp freshly cracked black pepper
Instructions:
- Place a large glass mixing bowl in the fridge for 15 minutes before starting.
- In a small ramekin, stir together the salt, sage, thyme, paprika, fennel, red pepper, garlic, onion powder, and black pepper.
- Add the 1 lb ground turkey to the chilled bowl, then drizzle over the maple syrup and olive oil.
- Sprinkle the spice blend evenly over the turkey.
- Use your hands or a sturdy fork to mix until just combined. Stop as soon as the spices are evenly distributed to avoid overworking the protein.
- Cover the bowl and refrigerate for 40 minutes.
- Scoop the meat into 8 equal portions and gently pat them into discs about 0.5 inch thick.
- Heat a skillet over medium heat for 3 full minutes before adding a light coating of oil.
- Place the patties in the pan, leaving space between each.
- Sear for 4 minutes on the first side until a deep brown crust forms, flip, and cook for another 3 to 4 minutes until the internal temperature hits 165°F.
