Ingredients:
- 2 medium potatoes (approximately 1 lb or 450 g), peeled and grated
- 1 cup (125 g) all-purpose flour
- 1 large egg
- ½ teaspoon salt
- ¼ teaspoon pepper
- 1 tablespoon fresh parsley, chopped (or 1 teaspoon dried)
- 2 tablespoons olive oil (or sunflower oil) for frying
Instructions:
- Grate the peeled potatoes and place them in a large bowl.
- Add the flour, egg, salt, pepper, and parsley to the grated potatoes. Mix well until a dough forms.
- Divide the dough into equal portions and flatten each portion with your hands to form discs (about ½ inch thick).
- Heat olive oil in a frying pan over medium heat.
- Place 2-3 discs in the pan and cook for 3-4 minutes on each side until golden brown and crispy.
- Remove from the pan and drain on paper towels. Repeat with remaining dough.
