Ingredients:

  • 2 medium potatoes (approximately 1 lb or 450 g), peeled and grated
  • 1 cup (125 g) all-purpose flour
  • 1 large egg
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • 1 tablespoon fresh parsley, chopped (or 1 teaspoon dried)
  • 2 tablespoons olive oil (or sunflower oil) for frying

Instructions:

  1. Grate the peeled potatoes and place them in a large bowl.
  2. Add the flour, egg, salt, pepper, and parsley to the grated potatoes. Mix well until a dough forms.
  3. Divide the dough into equal portions and flatten each portion with your hands to form discs (about ½ inch thick).
  4. Heat olive oil in a frying pan over medium heat.
  5. Place 2-3 discs in the pan and cook for 3-4 minutes on each side until golden brown and crispy.
  6. Remove from the pan and drain on paper towels. Repeat with remaining dough.
