Ingredients:
- ½ cup (120 ml) soy sauce (low-sodium recommended)
- ¼ cup (60 ml) rice vinegar

- 1 tablespoon (15 ml) mirin (optional for sweetness)
- 1 tablespoon (15 g) granulated sugar
- 1 teaspoon (5 g) fresh ginger, grated
- 1 clove garlic, minced (or ½ teaspoon garlic powder)
- 2 teaspoons (10 g) sesame seeds (toasted, for garnish)

- Combine soy sauce, rice vinegar, sesame oil, mirin, and sugar in a mixing bowl.
- Whisk together the ingredients until the sugar is dissolved.
- Add grated ginger and minced garlic (or garlic powder) to the mixture.
- Mix thoroughly until well incorporated.
- Taste the dressing and adjust seasoning, if needed (more sugar for sweetness, more soy sauce for saltiness).
- Pour the dressing into a jar and seal tightly.
- Chill in the refrigerator for 30 minutes before serving to enhance the flavors.
- Serve over your favorite salad or as a dipping sauce.
