Ingredients:

  • ½ cup (120 ml) soy sauce (low-sodium recommended)
  • ¼ cup (60 ml) rice vinegar
  • 2 tablespoons (30 ml) sesame oil
  • 1 tablespoon (15 ml) mirin (optional for sweetness)
  • 1 tablespoon (15 g) granulated sugar
  • 1 teaspoon (5 g) fresh ginger, grated
  • 1 clove garlic, minced (or ½ teaspoon garlic powder)
  • 2 teaspoons (10 g) sesame seeds (toasted, for garnish)

Instructions:

  1. Combine soy sauce, rice vinegar, sesame oil, mirin, and sugar in a mixing bowl.
  2. Whisk together the ingredients until the sugar is dissolved.
  3. Add grated ginger and minced garlic (or garlic powder) to the mixture.
  4. Mix thoroughly until well incorporated.
  5. Taste the dressing and adjust seasoning, if needed (more sugar for sweetness, more soy sauce for saltiness).
  6. Pour the dressing into a jar and seal tightly.
  7. Chill in the refrigerator for 30 minutes before serving to enhance the flavors.
  8. Serve over your favorite salad or as a dipping sauce.
