Ingredients:
- 1 medium green cabbage, quartered and sliced (about 2 pounds or 900 grams)
- 1 large onion, diced (about 1 cup or 150 grams)
- 2 tablespoons vegetable oil or lard
- 3 cloves garlic, minced
- 1 pound (450 grams) smoked sausage or ham hock, cut into pieces
- 1 teaspoon smoked paprika
- 1 teaspoon caraway seeds
- 2 tablespoons tomato paste
- 1 cup (240 milliliters) chicken or vegetable broth
- 2 tablespoons apple cider vinegar
- Salt and pepper to taste
- Fresh dill or parsley for garnish (optional)
Instructions:
- Remove outer leaves, quarter, and slice the cabbage.
- Heat oil in a large pot. Add diced onion and sauté until translucent (about 5 minutes).
- Stir in minced garlic, smoked paprika, and caraway seeds for 1-2 minutes until fragrant.
- Add the smoked sausage or ham; cook for another 5 minutes until lightly browned.
- Add sliced cabbage to the pot. Stir to combine with onion and meat.
- Stir in tomato paste; gradually add broth. Bring to a simmer.
- Stir in vinegar, season with salt and pepper. Cover and braise on low heat for 45 minutes, stirring occasionally.
- Taste and adjust seasoning as necessary before serving.
- Sprinkle fresh dill or parsley before serving.
