Ingredients:

  • 1 medium green cabbage, quartered and sliced (about 2 pounds or 900 grams)
  • 1 large onion, diced (about 1 cup or 150 grams)
  • 2 tablespoons vegetable oil or lard
  • 3 cloves garlic, minced
  • 1 pound (450 grams) smoked sausage or ham hock, cut into pieces
  • 1 teaspoon smoked paprika
  • 1 teaspoon caraway seeds
  • 2 tablespoons tomato paste
  • 1 cup (240 milliliters) chicken or vegetable broth
  • 2 tablespoons apple cider vinegar
  • Salt and pepper to taste
  • Fresh dill or parsley for garnish (optional)

Instructions:

  1. Remove outer leaves, quarter, and slice the cabbage.
  2. Heat oil in a large pot. Add diced onion and sauté until translucent (about 5 minutes).
  3. Stir in minced garlic, smoked paprika, and caraway seeds for 1-2 minutes until fragrant.
  4. Add the smoked sausage or ham; cook for another 5 minutes until lightly browned.
  5. Add sliced cabbage to the pot. Stir to combine with onion and meat.
  6. Stir in tomato paste; gradually add broth. Bring to a simmer.
  7. Stir in vinegar, season with salt and pepper. Cover and braise on low heat for 45 minutes, stirring occasionally.
  8. Taste and adjust seasoning as necessary before serving.
  9. Sprinkle fresh dill or parsley before serving.
