Ingredients:
- 1 cup (25g) fresh basil leaves, packed
- 1 clove (5g) garlic, peeled and smashed
- 1/2 cup (120ml) extra virgin olive oil
- 3 tbsp (45ml) fresh lemon juice
- 1 tsp (5ml) maple syrup
- 1 tsp (5g) Dijon mustard
- 1/2 tsp (3g) sea salt
- 1/4 tsp (1g) freshly cracked black pepper
Instructions:
- Place the packed basil leaves and the smashed garlic clove into the blender carafe. Pulse 3-4 times just to break down the larger leaves to prevent large garlic chunks.
- Add the olive oil, lemon juice, maple syrup, and Dijon mustard. Blend on medium-high for 30-60 seconds until the mixture transforms into a smooth, vibrant green liquid.
- Pour in the sea salt and black pepper. Pulse one final time to incorporate. Taste the dressing with a leaf of lettuce; if it feels too sharp, add a tiny drop more maple syrup to mellow the acidity.
