Ingredients:

  • 1 pound (450g) fresh green beans, trimmed
  • Salt, to taste
  • 2 tablespoons (30ml) olive oil
  • Juice of 1 lemon (about 2 tablespoons or 30ml)
  • Zest of 1 lemon
  • 1 teaspoon honey or maple syrup (optional)
  • Freshly ground black pepper, to taste
  • 2 tablespoons fresh parsley, chopped (or your choice of herbs)

Instructions:

  1. Rinse and trim the green beans, removing any tough ends.
  2. Fill a pot with an inch of water, place a steamer basket over the pot, and bring to a simmer. Add the green beans and cover. Steam for about 5 minutes or until bright green and tender-crisp.
  3. In a bowl, whisk together olive oil, lemon juice, lemon zest, honey, and black pepper until well combined.
  4. Drain the beans and place them in a large bowl; pour the dressing over the top. Add the chopped parsley and season with salt, tossing gently to combine.
  5. Transfer to a serving dish and enjoy warm or at room temperature.
