Ingredients:

  • 1 cup fresh strawberries, hulled and sliced
  • 1 tablespoon honey or agave syrup
  • 2 ounces white rum
  • 1 cup coconut cream or coconut milk
  • 2 ounces white rum
  • 1 tablespoon fresh lime juice
  • Fresh strawberry slices for garnish
  • Pineapple wedges for garnish
  • Mint sprigs for garnish

Instructions:

  1. Blend the sliced strawberries, honey/agave syrup, and white rum until smooth. Set aside.
  2. In a separate bowl, mix the coconut cream, white rum, and lime juice until well combined.
  3. In each serving glass, pour a layer of the strawberry mixture until it fills about half the glass. Carefully pour the coconut mixture over the back of a spoon to create a layered effect.
  4. Add fresh strawberry slices and mint on top for an inviting presentation.
  5. Enjoy immediately, optionally with a straw for sipping!
