Ingredients:

  • 1 cup granulated sugar (200 g)
  • 1 cup water (240 ml)
  • 2-3 cinnamon sticks (depending on desired strength)
  • 1 teaspoon vanilla extract (optional, 5 ml)

Instructions:

  1. Combine sugar and water in a medium saucepan.
  2. Add cinnamon sticks to the mixture.
  3. Heat over medium heat until sugar is dissolved, stirring occasionally.
  4. Bring to a gentle simmer; reduce heat to low and simmer for 10 minutes.
  5. Remove from heat and let cool for a few minutes.
  6. Strain syrup through a fine mesh sieve to remove cinnamon sticks.
  7. Optional: Stir in vanilla extract, if using.
  8. Transfer syrup to a heat-resistant container or bottle.
  9. Store in the fridge for up to one month.
