Ingredients:

  • 3 large Washington apples, peeled, cored, and sliced (about 4 cups or 600g)
  • 1/2 cup (115g) unsalted butter
  • 3/4 cup (150g) packed brown sugar
  • 1/2 teaspoon ground cinnamon
  • 1 1/2 cups (190g) all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup (100g) granulated sugar
  • 1/2 cup (120ml) vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup (120ml) buttermilk

Instructions:

  1. Peel, core, and slice the Washington apples. Toss apple slices with cinnamon and set aside.
  2. In a medium saucepan, melt butter over medium heat. Stir in brown sugar until dissolved, creating a smooth caramel.
  3. Pour caramel mixture into the base of the cake pan. Arrange apple slices over the caramel in a decorative pattern.
  4. In a mixing bowl, whisk together flour, baking powder, baking soda, and salt. In another bowl, beat together granulated sugar, oil, eggs, and vanilla until fluffy.
  5. Alternate adding dry ingredients and buttermilk to the egg mixture, mixing until combined.
  6. Pour batter over the arranged apples in the cake pan. Bake in a preheated oven at 350°F (175°C) for about 30-35 minutes until golden brown and a toothpick comes out clean.
  7. Allow the cake to cool in the pan for 10 minutes, then carefully invert onto a serving plate. Serve warm or at room temperature.
